I spent some time living in Pakistan, and instantly fell in love with the food, the people, the culture, and especially, the women. I’ve traveled all over the world, immersing myself in different cultures and learning the recipes of the countries I’ve visited, to better understand the people through what they eat and the love they put into their food. In my experience, the best way to get to know a culture and peoples is through their cuisine. It’s an opening to create bonds and life-long memories with them as well; while you may start as strangers, you end the experience with life-long memories.
Unfortunately, the wonderful flavors of the food of Afghanistan and Pakistan are mostly unknown to people outside of both countries. Language, measurements, spices, wars, they’re all barriers to us demystifying the wonderful flavors of this region. And yet, the women in these countries spend a lifetime learning these recipes; they don’t write them down, they don’t measure the ingredients. They cook only over fire. And they lovingly create these delicious dishes for their families and especially, their guests.
I have taken the time to “translate” for you some of my favorite recipes from both countries. It’s my goal to support women’s empowerment initiatives through your experience with their cuisine. I hope you enjoy!
